So it’s after 1am and it’s Christmas and I’m up with my sister making the Family’s traditional fruitcake.Here is the recipe
1 1/2 lb butter
1 1/2 lb sugar
7-8 eggs or 6
1 1/2 lb flour
1 tsp baking powder
1 tsp cinnamon
1 tsp essence
1 lb currants
1 lb prunes
1 lb raisins
1 1/2 mixed peel
Use cake mix or rum for soaking fruits.
Browning enough to colour as you desire.
Prepare fruits and soak in wine add cinnamon and leave for 2-3 weeks.
Method: Cream butter and sugar
Add fruits and mix well. Add sifted flour and baking powder,mix well.
Add browning mix again.
Pour into greased pan and bake in moderate oven for 1 1/2 hours. Cool in pan before turning out,sprinkle with wine.
and have yourself a very Merry Christmas.

Are you are foodie? Well I am,I love food,with me its the more the merrier and just like myself and many others we do not check the number of calories in there before we consume. Our motto is if it looks and taste good ,we should have it.
From cheesy Cheetos,moist chocolate cakes with thick frosting,baked, juicy chicken,mouth watering,finger licking,cheese dripping dishes,candies and meaty burgers you have me dribbling over here,you got me.:)
But what is the science of food,who taught man what to do and how to do it,what edible ingredients to add and to put less of to make the magic of food?
Food goes way back ,all the way to Jesus with the two loaves and five fishes,now was that fish raw,fried or cooked? lol How was the food prepared back then and who told them how to prepare it? Trial and error I guess.
I recall my mom amazing cooking I can still taste the hot soups,stew meats and provisions she prepared and my favorite: Callaloo, a soup like meal filled with green seasonings,dumplings,breadfruit and crab. I recall the struggles of breaking crab legs to find the meat and me and my siblings laughing at the mess we made while breaking the crab,what great memories.
Not to mention Christmas my favorite time of year,besides the caroling,decorating and gifts I look forward to the amazing food.The fruit cakes,sorrels,eggnog,wines,hams,turkeys,candies and the list goes on. Food I believe is a universal love language that knits families closer together.It resonates with sharing,giving,happiness and togetherness.
P. S I am currently exploring healthier food options though and I attempted at being a vegan for a month,but my taste buds got bored. So I am back at eating less meat with more vegetables.

Hey loves,here is another vegan recipe.
Ingredients
One large sweet potato
Coconut oil
Black peas
Quinoa
Bell pepper
Seasoning(salt,garlic,onion,parsley)
Cabbage
Cut potato into fry like stripes,season with salt and pepper then fry in coconut oil over low heat till golden brown.
Boil quinoa until tender,drain water and leave to settle.
Cook Black peas with seasoning for extra taste,gradually add quinoa to black peas and mix the two together,add bell peppers and allow to simmer.Gently bring to a boil.
Place fries on plate,alongside mixed black peas and quinoa add lettuce or cabbage salad.

OK guys,so here’s another vegan recipe,great meat substitute.
Ingredients
Can of Chick peas
Seasonings(Onion powder,garlic powder,pepper etc)
Flour
Sweet peppers
Coconut oil to fry
Tomato sauce
Method
Blend chick peas (after you’ve thrown the can water out,wash peas properly)in blender or food processor with water,seasoning and some flour,blend into creamy paste. Set pan on fire with coconut oil.
Roll chick peas batter into beef like shape patte sizes using the flour to keep paste together. Fry on both sides till golden brown. Place in bowl to cool.
Saute tomato paste with sweet peppers and onions add chick peas ,coat on both sides.
Serve with rice,chow mien or vegetables.

So I saw this picture on some vegan’s social media story showing this scrumptious,fried chicken wings,dipped in hot sauce. My curiosity drove me to ask him how he made it and why on earth he was eating chicken. He then explained that it was fried cauliflower chicken and went ahead to give me the recipe.
It’s been over a week since I bought the cauliflower and placed it in my refrigerator. So I decided to try the recipe when I saw it started drying up lol
Here’s the recipe
Cut your Cauliflower into small sections,set two bowls ,one with seasoned flower i.e celery,thyme,onion and garlic powder) the other bowl with ketchup and pepper or hot sauce your choice. I chose Ketchup and black pepper since I don’t like hot sauce.
Place your pan on fire with some coconut oil, immerse cauliflower in ketchup batter then flour ,ensure it is well coated in the flour substance before placing it in deep oil to fry. Fry until golden brown.
Serve with salad,rice etc.This is a simple, delicious vegan recipe for all my followers who are vegans or just wanna try something different. I am currently not eating meat and started trying vegan recipes.
